About This Recipe

Corn chaat recipe is a Indian chaat recipe made with freshly steamed or boiled sweet corn kernels, onion, tomato, roasted peanuts, some spice powders, green chilies, coriander leaves and lemon juice.

This Indian snack is also known sweet corn chaat or spicy corn chaat in many places. This one makes for a perfect evening snack but I love this as light dinner during monsoons.

Making corn chaat recipe is super easy and this dish is absolutely versatile. You can keep the boiled sweet corn as base and vary the fixings as you prefer.

While sweet corn is mostly used for this chaat, you can easily use Indian corn or desi corn in this especially when it is in season. I in fact prefer Indian corn for this more than sweet corn.

If you have boiled or steamed corn cob handy you can make this snack in less than 10 minutes. You can also easily use frozen sweet corn or frozen corn kernels here. You just have to blanch them for few minutes in boiling water and use.

This corn chaat is a healthy, easy to make home style one but you can totally improvise it by adding toppings and fixings of your choice.

I usually add a generous dose of finely chopped onion, tomatoes, cucumber, cilantro leaves and top with whatever namkeen I have handy. Sometimes I add chutneys like green chutney or tamarind chutney if I have.

A good dose freshly cracked pepper, lemon juice and pinch of chaat masala powder adds a wonderful zing and taste to this corn chaat recipe.

This is an oil free chaat recipe made with very few simple ingredients. Gather the ingredients and fix a bowl or two of this healthy chaat and enjoy!

Ingredients & Substitutes

Corn Kernels

You could use both sweet corn cobs or desi corn here. I have used sweet corn this time but I absolutely love this chaat with Indian corn or desi corn too.

You can boil or steam the corn for this chaat. For a more rustic taste you can even fore roasted corn. If you want to go all out just make this crispy corn recipe, add all the fixings and serve 🙂

If fresh corn is unavailable you can use frozen corn. Just blanch it for few minutes.

Onions Tomatoes

Just like most of the Indian chaat recipes here also we are adding a wonderful flavor punch with loads of finely chopped red onion in corn chat. I also like to throw in some salad tomato for color pop.

If you prefer milder flavor you can use white or yellow onion. For a different flavor you can also throw in chopped scallion greens or spring onion greens.

Chaat Masala Powder

Use good quality chaat masala powder for that wonderful taste, flavor and zing. You just need a pinch of it to bring the flavors together.

If you don’t have chaat masala powder try adding a pinch of roasted cumin powder and amchur or raw mango powder.

Lemon Juice

Add freshly squeezed lemon juice or lime juice to the corn chaat just before serving. It adds a wonderful tangy taste and refreshing flavor.

If lemon juice is unavailable just add raw mango powder.

Chutneys

Unlike traditional Indian chaat recipes, adding chutneys are optional here. I like to make this chaat dry so I prefer it without chutneys. You can however add a bit of green chutney, sweet chutney or even this garlic chutney if you like.

Other Ingredients

Fresh coriander leaves or cilantro leaves, pomegranate arils, cucumber, raw mango, any namkeen like bhel, sev, roasted murmura or pori, green chili, black salt or rock salt and a pinch if sugar. Red chilli powder or paprika can also be added for spicier masala corn chaat.

If you prefer to add more vegetables you can try adding green bell pepper or red bell pepper, candy peppers, grated carrots too. Even sprouts can be added.

How To Make Corn Chaat Recipe

Boiling Sweet Corn

I have used pressure cooker for boiling the corns. You can also use a steamer or boil them in a pan.

Add 2.5 cups corn to a pressure cooker and add 3 cups water to it. Add a pinch of salt and mix.

Pressure cook for 2-3 whistles or until the corn kernels cook well.

Drain in a colander.

Preparing The Vegetables

For chopping onion, tomatoes I prefer to use a food processor. Do use it if you have one. Add 1 halved onion, 1 halved small tomato, 2 green chillies & 1/4 cup coriander leaves to a food processor jar. Process for a minute.

Also dice one 1 small cucumber if you are using.

Making Sweet Corn Chaat

Add the boiled corn kernels to a large mixing bowl.

Add the prepared vegetables.

Next add diced cucumber and pomegranate arils. Also add bell peppers now if using.

Now add rock salt or black salt to taste, 1/4 teaspoon chaat masala powder and 1/4 teaspoon freshly cracked black pepper & 1/2 teaspoon sugar. You can also ad 1/2 teaspoon red chili powder if you prefer.

Mix all the ingredients well, add 1 tablespoon lemon juice. You can also add 2 tablespoons prefered chutney now.

Divide the masala corn chaat among serving bowls. Top with namkeen of choice and serve immediately.
