This year, Farang London chef Seb Holmes, has teamed up with British Lion Eggs to deliver six quick and tasty street food inspired recipes all celebrating this year’s theme: #putaneggonit.

The theme aims to encourage people to eat eggs in more unusual ways by putting an egg on dishes they wouldn’t normally think to try.

WHAT IS NASI GORENG?

Nasi Goreng is a popular Indonesian fried rice dish that is also frequently found in Malaysia and Singapore. Very popular for breakfast in Indonesia, but simple versions are also often sold by street vendors for other meal occasions.

Pre-mixed nasi goreng spice mixes and spice paste pots are available in lots of large supermarkets or specialty asian stores, but my simple Nasi Goreng recipe uses easy to find ingredients that you might already have in the cupboard!

WHAT ARE THE KEY INGREDIENTS IN AN AUTHENTIC NASI GORENG?

Typically the indonesian version of this dish would include fried rice, meat and/or vegetables with an indonesian sweet soy sauce also known as ketjap manis, but the beauty of this simple dish is that you can really play around with the ingredients and make lots of different fried-rice variations to suit your own tastes.

MY SIMPLE RECIPE

I wanted to use ingredients in my recipe that you might already have in your store cupboard so I just used regular soy sauce and fish sauce. And all my other ingredients will be readily available in your local supermarket so no need to go looking for your local asian markets to source hard to find ingredients.

To make my dish into a balanced main meal,I included eggs both stir fried into the rice itself and also topped with a sunny side up fried egg.

This makes for a really nutritious, filling and of course delicious main dish or dinner that can be whipped up in just 15 minutes. The easiest mid-week meal when time is not on your side!

RECIPE ADAPTATIONS

Feel free to play around with this recipe to suit your own tastes. You could swap out the spring onions for ribbons of fresh cucumber, or add in a sprinkling of sesame seeds on top for a little bit of extra texture!

Or even top with some delicious crispy shallots. This indonesian dish really is so versatile so make it your own!

Also, the chili sauce is totally optional, so you don’t have to add it if you don’t like spicy food!

Since my recipe doesn’t include any meat you could also serve smaller portions of this recipe as the perfect side dish to accompany things like chicken satay skewers or asian style pork dishes.

Description

A delicious and easy recipe for Nasi Goreng, finished off with a crispy fried egg!

Ingredients

  • 3 tsp oil
  • 4 medium eggs
  • ½ onion, finely diced
  • 2 cloves of garlic, crushed
  • 1 red chilli, chopped
  • 2 spring onions, chopped
  • 200g / 7oz chinese or sweetheart cabbage, shredded
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 300g / 2 cups cooked long grain rice
  • Optional to top: large lettuce leaves, fresh coriander and chilli sauce

Instructions

  1. Add one teaspoon of oil to a wok and heat. Crack in two of the eggs and whisk quickly. Cook the eggs for 3-4 minutes like you are making scrambled eggs. Remove from the heat and spoon the eggs into a bowl.
  2. Add another teaspoon of oil in the same work and add in the onion. Fry for 2-3 minutes until they are starting to soften. Add the garlic, chilli and spring onions and cook for a further 2 minutes. Add the cabbage and continue to stir fry for another 3-4 minutes until it is soft but still with a little bite to it.
  3. Mix in the fish sauce and soy sauce and then add the cooked rice and scrambled eggs. Mix everything together well.
  4. Divide the rice mixture between two large lettuce leaves.
  5. Heat the last teaspoon of oil in the wok. Crack in the remaining two eggs and fry on a high heat for 3-4 minutes. Add the fried eggs to the top of the rice parcels.
  6. To finish, drizzle with chilli sauce and sprinkle on some chopped fresh coriander.
