Let’s Talk Pumpkin
When fall season rolls around so many people start thinking about pumpkin. Personally, I crave sweet pumpkin treats all year round. To me, the flavors of pumpkin pie spices and the smell of pumpkin fill my senses, but most of all reminds me of family gatherings.
Did you know that pumpkin is a superfood? Yes, that is right in addition to being naturally sweet and great tasting pumpkin is loaded with nutrients. I like baking with pumpkin because it is an easy way to introduce beneficial nutrients to my family’s diet. It supports good eye health, known to boost the immune system, and provides a healthy dose of fiber and protein, amongst other benefits.
As a child, I couldn’t wait to get a slice of my grandma’s pumpkin bread. Now I share my favorite pumpkin bread and dessert recipes with my kids. I used my pumpkin bread recipe (below) for muffins and became known as the muffin lady with my son’s friends.
Here are just a few of my latest pumpkin recipe finds and some of my personal recipes for you to try.
Pumpkin Muffins
The delicious Pumpkin Spice Muffins from Pioneer Woman are perfect for breakfast. You can also whip up her cream cheese frosting recipe top the muffins. Viola, you have a sweet dessert.
You will want to try my pumpkins muffins too, especially when you need something easy and quick! Only 3 ingredients! Easy to make and oh so delicious. The topping on the top makes them extra special, but they are good without it too!
Pumpkin Cupcakes
Pumpkin Ale Cupcakes with Streusel Cream Cheese Frosting from Snappy Gourmet makes the best dessert. What makes this cupcake is the pumpkin and the pumpkin ale. (Yep, you read that right, there’s beer in this recipe.) Try using fall-colored muffin cups or mini bundt pans to make this cake fancier.
Pumpkin Ale Cupcakes is another great recipe from my sister in law. Who would have known that beer and pumpkin was a match made in heaven. She made these for my brother to take to work and they were a HIT!

Trust me this is the only pumpkin bread recipe you will ever need!

These pumpkin cookies hit the mark for pumpkin and chocolate lovers. Oh so moist and delicious. They are perfectly spiced and ready for fall. You won’t be able to wait to sink your teeth into this moist pumpkin and chocolate chip cookie. It’s just so delicious and easy, you will make them again and again.
Pumpkin Bars
Pumpkin Bars with Fluffy Cream Cheese Frosting from Cooking Classy serves up all the flavors of pumpkin pie in a moist bar. This recipe is a bit healthier than some as it replaces cooking oil with half apple sauce and melted butter. Doing this makes the bars even more moist. This is another great recipe for big gatherings.
